Sweet Potato Fries

(Yields: 1 plate, Serving: 2, Prep time: 10 mins, Cook time: 40 mins)

Ingredients

  • 1 packet of precut orange sweet potatoes (about 2.5 cups)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • Seasonings: (Your preference) Paprika, garlic powder, turmeric, Italian spices, curry powder, Chinese five spice, garam masala, pumpkin pie spice etc.

Instructions

Preheat oven to 430°F (221°C).

Chop up the sweet potatoes in semi big slices as pictured. (Or, you can buy pre-cut sweet potato fries from the supermarket, which was what I got).

Soak sweet potatoes in water for 30 minutes to let the starch out. This makes it less soggy when you bake it!

See how the water is all cloudy? That’s the starch!

Take sweet potatoes out of the water and onto an oven tray with paper towel underneath.

Use paper towels to dry the sweet potatoes well.

Leave the dried sweet potatoes out on the tray for an extra 30 minutes to make sure it’s completely dry.

See how some of those sweet potato pieces are GIANT? Use a knife and cut some of them so they are thinner.

Pour the tablespoon of olive oil in the baking tray and make sure all sweet potatoes are covered in oil.

Sprinkle seasoning and salt, turn over and do the same.

Bake in the oven for about 30 minutes or until they are brown and crispy.
