Raw Vegan Chocolate Cherry Protein Bars

(Yields: 4 bars, Serving: 4, Prep time: 25 mins, Cook time: 10 mins)

Ingredients

Cherry Paste

  • 1 1/2 cup pitted cherries
  • 1 tablespoon corn starch
  • 1 sprinkle sea salt

Protein Bar

  • All cherry paste
  • 1 cup oatmeal
  • 2 tablespoons shredded coconut
  • 1/4 cup almond meal (or almonds)
  • 1 tablespoon dark cocoa powder
  • 1 tablespoon cocoa powder
  • 1 teaspoon pure vanilla extract
  • 1/4 cup vanilla protein powder of choice
  • 1 tablespoon crushed hazelnuts

Instructions

Take all the pits off the cherries and measure about 1 1/4 cup.

Put it in the blender and blend until it’s smooth and watery.

Pour it into the saucepan and add a tablespoon of corn starch with sea salt, and mix it well until everything is dissolved.

Turn the heat on medium high and cook for about 8-10 minutes (it’s ready when the cherry paste turns sticky and dark).

Put the cherry paste into the blender, along with a cup of oatmeal, 2 tablespoons shredded coconut, 1/4 cup almond meal (or almonds), dark cocoa powder, cocoa powder and vanilla extract.

Blend until it’s smooth.

Spoon the mixture out into a bowl and add the vanilla protein powder.

Mix until everything is nice and thick.

Spoon it into an oven tray and form the shape of a rectangle and put it in the freezer for 20-30 minutes to harden.

Meanwhile, crush some hazelnuts.

Sprinkle with crushed hazelnuts and cut it up!
