(Yields: 1 bowl, Serving: 2, Prep time: 10 mins, Cook time: 35 mins)
- 1 purple onion
- 2 tablespoon olive oil
- 3-4 Sprinkles of sea salt
- 2 tablespoons red wine
- 3 teaspoons soy sauce
- 1/2 avocado
- Soy sauce (to drizzle on avocado)
- Brown rice
Dice the onion into small, bite size pieces.
Put olive oil in pan and toss in the onions and salt.
Cook on medium heat for about 15 minutes, then add red wine and soy sauce.
Cook for about another 25 minutes until onions are soft, brown and sweet.
If you want to eat this with brown rice, then cook the brown rice during this time. Follow my brown rice recipe.
If you’re eating this with avocados, then cut about half an avocado into slices and drizzle soy sauce on top.
