(Yields: 1 plate, Serving: 2, Prep time: 15 mins, Cook time: 40 mins)

Ingredients

  • 3 medium/large parsnips
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons nut butter (I used almond butter)
  • 1 tablespoon olive oil

Instructions

Peel the skin off the parsnips.

Then, cut them into the size of a fry and put them in a bowl of water for 30 minutes.

Use a paper towel to thoroughly dry the parsnips.

Preheat oven to 400°F (204°C).

Lay the parsnip fries on an oven tray.

Add the garlic and onion powder, salt, olive oil and nut butter to the parsnips.

(This is the packet of almond butter I used)

Now, it’s time to get messy. Go wash your hands if they are dirty.

Use your hands to make sure all parts of the parsnip gets evenly coated in the oil, butter, salt and spices.

Wash your hands afterwards, otherwise… Yeah!

Make sure the fries are spread out on the oven tray without overlapping each other.

Bake in the oven for about 30-40 minutes (if your fries are thin, then it will take shorter time).

Check the parsnips after 15-20 minutes and flip them over, otherwise one side will be burnt.
