(Yields: 1 bowl, Serving: 2, Prep time: 10 mins, Cook time: 12 mins)
- 10-12 mushrooms
- 1 tablespoon extra light olive oil
- 1/2 cup frozen peas
- 1 teaspoon curry powder
- 1/2 teaspoon coriander
- 1/8 teaspoon cayenne pepper
- A few sprinkles sea salt
- 1 scallion
Chop the mushrooms into slices and put it in the frying pan with the oil.
Saute for 5 minutes on medium high until the mushrooms become softer, and add the peas, curry powder, coriander, cayenne pepper and salt.
Saute for another 5 minutes.
Chop the scallion into very small circles and add it.
Stir for a minute and serve.
