Note: Try and use smaller sweet potatoes as larger ones will take a very long time to cook.
What you will Need
- Sweet Potatoes (2 small/medium sweet potatoes give about 1 cup puree)
- Oven Tray
Preheat oven to 350°F (176°C).
Wash the sweet potatoes you’re using to roast.
Lay them out on the oven tray (does not need to be greased).
Bake for about one hour, then stab the sweet potatoes with a sharp object like a knife or cake tester. If it’s soft, then it’s ready.
Do note that different sized sweet potatoes may take different times. The smaller ones will always cook faster (perhaps less than an hour) and larger ones can even take up to 1 hour and 30 minutes or longer.
Once the sweet potatoes are cooked, you can either eat them as they are or use them for other ingredients.
Here, I have removed all the skin off the sweet potatoes to make a mash.
