- 2 potatoes, skinned
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- A few sprinkles of freshly ground lemon pepper/black pepper
- 1-2 fresh parsley leaves
Preheat oven to 400°F (204°C).
Skin the potatoes.
Chop the potatoes into medium to small pieces and place them in a bowl.
Peel the garlic and mince them, then put them in a small bowl.
Pour two tablespoons of olive oil and 1/4 teaspoon of salt over the garlic.
Mix well until salt is even.
Pour the mixture of salt, olive oil and garlic over the potatoes.
Use a spoon and stir until all the potatoes are covered in olive oil.
Add a layer of aluminum foil under the baking tray and and spray on some non stick cooking spray.
Lay the potatoes out in the oven tray evenly.
Add a few sprinkles of lemon pepper or ground black pepper on the top.
Roast in the oven for about 45 minutes to an hour until potatoes are browned. (Make sure you check a couple of times and flip them over.)
Garnish with fresh, minced parsley.
