(Yields: 1 bowl, Serving: 2, Prep time: 10 mins, Cook time: 12 mins)
- 1 potato
- 2 Roma tomatoes
- 2 cups water
- 1 tablespoon lemon juice
- 1 tablespoon onion flakes
- 1/4 teaspoon sea salt
- 2 bay leaves
- 1/8 teaspoon cayenne pepper
- A pinch of crushed red pepper
- 2 tablespoon extra virgin olive oil (garlic flavoured if possible)
Chop the potatoes in very thin, small slices, and tomatoes in small pieces.
Add 2 cups of water in a saucepan with the sliced tomatoes and potatoes.
Bring it to a boil, then turn the heat to medium.
Prepare some of the ingredients:
Add the lemon juice, onion flakes, sea salt, bay leaves, cayenne pepper and red pepper.
Simmer for about 10-15 minutes.
Turn the heat off and add the olive oil.
Be sure to remove the bay leaves before serving.
