(Yields: 3 potatoes, Serving: 2, Prep time: 15 mins, Cook time: 1 hr 30 mins)
- 3 red potatoes
- 1 tablespoon extra light olive oil
- 1 teaspoon Italian herbs
- A few sprinkles Himalayan/Sea salt
- A few sprinkles ground black pepper
Fill enough water to cover the top of 3 red potatoes in a saucepan.
Bring it to a boil and continue cooking in high heat for a total of 45-55 minutes (depending on the size of your potatoes)
Preheat oven to 400°F (204°C).
Use a potato masher, a flat spatula or something else to crush the potatoes.
Drizzle the olive oil over the potatoes.
Sprinkle the Italian herbs, salt and pepper.
(You may wish to use other spices, it’s totally up to you!)
Bake in the oven for about 35 minutes until they become a little crispy.
