(Yields: 1 plate, Serving: 2, Prep time: 15 mins, Cook time: 30 mins)
- 1/2 cauliflower
- 1 small onion
- 1 clove garlic
- 1 tablespoon canola oil
- 1/4 jalapeno pepper
- 1/4 teaspoon salt
- 1/2 scallion
Use a grater to grate the cauliflower until they become the size of rice.
(You can also use a food processor, but I was afraid my blender would just make it into a paste!)
Set it aside.
Dice the onions and chop the garlic.
Put it in the frying pan with a tablespoon of canola oil and saute until lightly brown.
(Should take about 20 minutes)
Chop the jalapeno pepper and scallion into small pieces.
Add the jalapeno pepper, cauliflower and salt into the frying pan and saute on medium heat for about 10 minutes.
Finally, add the chopped scallions, turn the heat off and serve.
