Blogilate’s Healthy Banana Oatmeal Ice Cream Cookie Sandwich

I simply adore this recipe by Blogilates and had to share it with all of you! I did change a few things around so here is the version I made:

(Yields: 4 cookies (2 sandwiches), Serving: 2, Prep time: 15 mins, Cook time: 15 mins)

Ingredients

Cookie

  • 1 large ripe banana
  • 2 cups instant oatmeal

Ice Cream

  • 2 small frozen bananas
  • 1/2 frozen avocado
  • 2 tablespoons roasted almonds

Instructions

(Before you make this, be sure you have frozen 2 small frozen bananas and 1/2 avocado overnight)

Preheat oven to 350°F (176°C).

Add 1 large ripe banana and 2 cups of oatmeal in a blender. (I use Vitamix)

Blend until it’s smooth and thick.

Spoon the mixture out.

Roll it into a ball.

Flatten it on the table with your hands so it becomes a flat pancake looking shape.

Put the cookies onto a baking tray.

Bake the cookies in the oven at 350°F for about 15 minutes.

Let it cool down for a while. If you want to speed it up, try putting it in the freezer (you don’t want melted banana ice cream, believe me. They don’t taste better than regular melted ice cream).

Ice Cream

Put the frozen bananas and avocado along with the almonds in the blender.

Blend until it becomes a smooth cream.

Scoop the ice cream onto the cookie, then add another on top to make a sandwich.

Note: I actually think it’s easier to eat with just one cookie with ice cream on top, because when you bite on the sandwich, all the ice cream tends to splatter everywhere.
